How to Make Chole Bhature: A Street Favorite at Home

Ingredients for Chole

  • 1 cup chickpeas (soaked overnight)
  • 2 medium onions finely chopped
  • 2 tomatoes pureed
  • 2 green chilies chopped
  • 1 tsp ginger garlic paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander for garnish

Ingredients for Bhature

  • 2 cups all purpose flour
  • 1/2 cup yogurt
  • 1 tsp sugar
  • 1/2 tsp salt
  • Water as needed
  • Oil for deep frying

How to Make Chole

  1. Boil soaked chickpeas until soft. You can use a pressure cooker to save time.
  2. Heat oil in a pan add cumin seeds and sauté onions until golden brown.
  3. Add ginger garlic paste and green chilies and sauté for a minute.
  4. Add tomato puree and cook until oil separates from the masala.
  5. Mix in turmeric red chili powder coriander powder and salt.
  6. Add boiled chickpeas and some chickpea water to make a thick gravy.
  7. Simmer for 10 to 15 minutes and finish with garam masala and fresh coriander.

How to Make Bhature

  1. In a bowl mix flour yogurt sugar and salt. Knead into a soft dough using water as needed.
  2. Cover and let the dough rest for at least 1 hour.
  3. Divide dough into small balls and roll them out into circles.
  4. Heat oil in a deep pan and fry each rolled bhature until they puff up and turn golden brown.

Serving Suggestion

Serve hot chole with freshly fried bhature along with sliced onions pickles and a wedge of lemon for the perfect street food experience at home.
